Chicken in sweet and sour sauce

Sweet and sour chicken is a favorite Chinese dish. It's easy to prepare, and the tender pieces of chicken can be served with steamed rice or any other side dish. Step-by-step recipe
Step 1:
Cut the chicken into small pieces, approximately 2 by 2 centimeters in size.
Step 2:
Place the chicken in a bowl, add one teaspoon of salt, black pepper, cornstarch and stir until the meat is completely coated with the starch and spices.
Step 3:
Heat a frying pan, add vegetable oil, and add the chicken. Fry for 3-4 minutes over high heat.
Step 4:
Transfer the fried chicken to a bowl.
Step 5:
Add sugar, one teaspoon of salt, pepper flakes, chopped garlic, sesame oil, soy sauce, apple cider vinegar, and ketchup to the pan and stir. Bring to a boil over medium heat.
Step 6:
In a bowl, mix one tablespoon of cornstarch with 2 tablespoons of water, stir until the starch is completely dissolved and add to the sauce.
Step 7:
Cook the sauce over very low heat for one minute, until thickened.
Step 8:
Add the chicken to the sauce, stir and fry for 1-2 minutes over low heat.
Step 9:
Sprinkle the chicken with sesame seeds and serve.
Cooking tips
When preparing, keep in mind that soy sauce is naturally salty. Be sure to taste it to avoid oversalting your sauce.
If the ketchup is very sour, you need to add less vinegar.
Unrefined vegetable oil interrupts the flavor of chicken meat, so it is better to avoid it.
