Chicken Khoy-gusht
Origin of the recipe
Khoy-gusht means "egg-meat" in the Juhuri language. This delicious and very filling casserole is a traditional dish of the Mountain Jews living in the Caucasus. It is made not only with chicken, but also with beef, and even eggplant and potatoes. Try making khoy-gusht with chicken thighs.

Step-by-step recipe
Step 1:
Place a pot of water on the stove, bring to a boil, and add the chicken thighs. Add a tablespoon of salt and skim off any remaining scum.
Step 2:
Chop the onion roughly. Pour vegetable oil into a saucepan and lightly fry the onion.
Step 3:
Season the onion with a teaspoon of salt, stir, cover, and sauté. Add a teaspoon of pepper, stir, cover again, and continue sautéing.
Step 4:
Remove the cooked chicken from the pan. Remove the skin and shred the meat with your hands.
Step 5:
Place the meat in a pan with the onions, fried until golden brown. Stir.
Step 6:
Add cinnamon to taste. Stir.
Step 7:
Add chicken broth, stir and cover.
Step 8:
Crack the eggs, separate the whites from the yolks, and add salt. Lightly beat the whites.
Step 9:
Add turmeric to the yolks and stir.
Step 10:
Pour the egg whites into the chicken, stir, cover and cook for 5 minutes.
Step 11:
Pour in the yolks and spread them over the surface.
Step 12:
Bake in the oven at 270 degrees Celsius until golden brown. Arrange portions on a platter and serve.
Cooking tips
You can use beef instead of chicken – the cooking principle will be the same.
This dish can be cooked over low heat rather than in the oven.
If you have chestnuts, you can add them.
