Buffalo chicken wings with spicy sauce
Origin of the recipe
One of the most popular appetizers in the United States originated in 1964 in a small bar in Buffalo, New York. Without the Anchor bar and the ingenuity of its owner, who simply wanted to use up some leftover cooked wings to feed her family, Americans likely would never have discovered their insatiable love for crispy wings drenched in sweet and spicy (or any other suitable) sauce. Today, Buffalo wings are a traditional American appetizer. The dish's popularity is evidenced by the fact that they have become a regular feature of the Super Bowl—the championship game of the National Football League (NFL).

Step-by-step recipe
Step 1:
Take the wings and place them on a large plate or board. Sprinkle with ground cumin, garlic, and paprika. Drizzle with vegetable oil, and season with salt and pepper.
Step 2:
After this, toss the wings with the spices until evenly coated. You can toss them with your hands or with something that won't damage the wings (for example, don't use a knife).
Step 3:
Separately mix the starch, flour, and baking powder. Sprinkle the mixture over the wings and mix again until an even layer forms. Place the wings on a baking sheet (covered with parchment paper) and bake for 50 minutes at 190 degrees Celsius.
Step 4:
Melt the butter in a frying pan, add the tomato paste, chili, and honey. Stir until the sauce is heated through. Remove the pan from the heat.
Step 5:
Remove the wings from the oven. Place them on a plate, pour the glaze over them, and toss thoroughly.
Step 6:
Mix mayonnaise and sour cream, add lemon juice and garlic. Sprinkle with salt and pepper. Mix thoroughly.
Step 7:
Take a large plate, place a container with sauce in the center and carefully arrange the wings around it.
Cooking tips
The key to perfect crispiness is to place the wings on a rack inside a rimmed baking sheet. The rack allows air to circulate under the wings and ensures even cooking.
You can prepare and freeze the wings (without the sauce) in advance. On the day of cooking, place them on a rack set on a baking sheet and cook in the oven at 200°C for about 10-15 minutes. Then, baste them and proceed to the final step of the recipe.
