Okroshka on tan
Origin of the recipe
If you're a little tired of okroshka made with kefir, try a recipe with an Eastern twist: okroshka made with tan, a light fermented milk product popular in the Caucasus and Central Asia. If you prefer a softer, more subtle flavor, you can use ayran, another popular Asian milk drink, instead of tan.

Step-by-step recipe
Step 1:
Boil potatoes and eggs.
Step 2:
Cut the green onions into thin rings and place in a deep container.
Step 3:
Chop the dill and add it to the onion. Season with salt and mash the greens with a potato masher.
Step 4:
Cut the cucumbers into small cubes and add to the greens.
Step 5:
Cut the sausage and eggs into small cubes and add to the container.
Step 6:
Cut the boiled potatoes into medium pieces and add to the remaining ingredients.
Step 7:
Pour in the tan and mix well.
Cooking tips
It is better to rub the greens for okroshka with salt so that they release their aroma better.
Before serving, you can cool the okroshka in the refrigerator or use well-chilled ingredients.
