Origin of the recipe
The name of this traditional Chinese dish translates as "ants climbing a tree" due to the grains of fried ground pork clinging to the starchy noodles. These noodles are vaguely reminiscent of the familiar "navy-style macaroni" we've all grown up with, but have a distinctly Asian flavor and are sure to please those who like their food hot.

Step-by-step recipe
Step 1:
Place the glass noodles in a bowl, pour boiling water over them, cut into pieces with scissors and leave for 30 minutes.
Step 2:
Finely chop the green onions, crush the garlic and ginger, and finely chop the onion.
Step 3:
Pour vegetable oil into a frying pan and fry the onion for 3 minutes over high heat.
Step 4:
Add ginger, garlic, and white part of the green onion. Sauté for 2 minutes over high heat.
Step 5:
Place the minced pork in the pan and fry for 2-3 minutes over high heat.
Step 6:
Empty the center of the pan and add the hot bean paste and fry lightly.
Step 7:
Pour soy sauce over the bean paste.
Step 8:
Pour water into the center of the pan, add sugar, stir and fry for 2-3 minutes over high heat.
Step 9:
Rinse the glass noodles in cold water and place in a frying pan.
Step 10:
Stir, add chopped green onions, stir.
Step 11:
Add sesame oil, stir and remove from heat.
Cooking tips
It is better to mix the noodles with two wooden spatulas so as not to damage them.
Spicy bean paste can be purchased online or at Asian grocery stores.
