Finnish carrot casserole
Origin of the recipe
In Finland, a wide variety of casseroles, both savory and sweet, are often prepared for the winter holidays. This carrot casserole, Porkkanalaatikko (meaning "carrot box") with rice and egg, is more of the latter, as carrots themselves are naturally sweet. This casserole is tender, filling, and delicious.
