Matzah Babka
Origin of the recipe
Babka is a casserole made from grated potatoes in Belarus. Babka made from matzah, a dry, unleavened bread baked by Jews, is called matsebrai. This babka is baked for Passover, when religious customs prohibit the consumption of leavened bread. Besides eggs, matsebrai is sometimes topped with apples, mushrooms, cheese, and ground meat.

Step-by-step recipe
Step 1:
Grind the matzo into a bowl.
Step 2:
Pour in half a liter of warm milk, stir and leave to soak under the lid for 10 minutes.
Step 3:
Crack 6 eggs into a bowl. Add a teaspoon of salt and whisk.
Step 4:
Add eggs to matzo and stir.
Step 5:
Pour olive oil into the frying pan and add the prepared mixture.
Step 6:
Fry the babka for 7 minutes on each side over medium heat and serve.
Cooking tips
When cooking, you can add mushrooms fried with onions and cheese or feta cheese.
If you observe kosher, it is best to crack each egg into a separate bowl to avoid any possible blood clot in the yolk.
It is convenient to turn the babka over to fry the other side using a lid or plate.
