Step 1:
Peel the carrots and grate them on a medium grater.
Step 2:
Heat a frying pan, add the carrots and begin frying over medium heat.
Step 3:
Add sugar and stir.
Step 4:
Simmer over high heat until all the juice has evaporated.
Step 5:
Remove the pan from the heat and grate the lemon zest into it.
Step 6:
Squeeze the juice of half a lemon and pour it into the pan.
Step 7:
Add chopped walnuts and stir.
Step 8:
Form balls, roll in coconut flakes and place in paper bowls.
Step 9:
Serve with your favorite herbal tea.
