Tender zucchini is a favorite among many, but stewed and fried zucchini aren't the only things you can make with it. Try these super simple and delicious zucchini fried in grated cheese, egg, and breadcrumbs.
Step-by-step recipe
Step 1:
Make longitudinal grooves on the zucchini with a fork, trim off the ends and cut them into slices lengthwise.
Step 2:
Place the zucchini in a bowl, add salt and pepper, rub with your hands and leave for 15-20 minutes.
Step 3:
Grate 100 g of cheese onto a plate, sprinkle with dried parsley and paprika.
Step 4:
Break 3 eggs into a plate with cheese and stir.
Step 5:
Place breadcrumbs and flour on a plate and mix thoroughly.
Step 6:
Dredge the zucchini in flour and breadcrumbs, then in cheese and egg.
Step 7:
Pour vegetable oil into a frying pan, add zucchini, fry on both sides, then cover for 4-5 minutes.
Step 8:
Fry all the slices, arrange on plates, garnish with parsley and serve.
