Step-by-step recipe
Step 1:
In a bowl, mix together the chickpea and rice flours, turmeric, cumin, coriander, asafoetida and salt.
Step 2:
Pour in water and mix the batter.
Step 3:
Trim the ends of unpeeled zucchini and squash and cut them into rings 0.5 cm thick or slightly thicker.
Step 4:
Roll the vegetable slices in the prepared batter.
Step 5:
In a deep frying pan or wok, bring the oil to a boil and fry the zucchini and squash in it, one at a time, until golden brown.
Step 6:
Place the finished pakora on a plate and serve.
Cooking tips
You can make chickpea flour yourself from dry chickpeas in a coffee grinder.
If you eat garlic, you can use dried garlic powder instead of asafoetida.
When mixing the batter, add water gradually, in portions, and mix the dough again each time, then it will turn out more homogeneous.
