Okroshka with sausage, served with kefir and mineral water, is the same classic okroshka that's just as refreshing in the heat as traditional Russian okroshka with kvass. Its milder flavor will appeal to those who find kvass too strong.

Step-by-step recipe
Step 1:
Boil potatoes and eggs.
Step 2:
Finely chop the onion and dill.
Step 3:
Place the greens in a saucepan, add salt and mix well.
Step 4:
Cut the sausage into small cubes and add to the pan.
Step 5:
Cut the eggs into small cubes and add to the other ingredients.
Step 6:
Grate on a fine grater and add radish.
Step 7:
Peel the cucumbers, cut them into cubes and add them to the pan.

Cut the potatoes into small cubes and add to the other ingredients.

Add mayonnaise, kefir, and mineral water. Mix thoroughly.

Add vinegar and stir again.
Cooking tips
After adding mayonnaise, you can pre-mix the ingredients - this will bind the mayonnaise better.
Instead of vinegar, you can add citric acid.
Before serving, cool the okroshka in the refrigerator.
