Origin of the recipe
If the hills and cliffs of Ireland beckon you and you love celebrating St. Patrick's Day, then bake a traditional Irish cake, Simnel, made of gingerbread and marzipan for Easter. The top of this cake must be topped with 11 marzipan balls, symbolizing the 11 disciples of Christ (minus the traitor Judas). Easter Simnel cake is a light, richly decorated cake traditionally made in Great Britain and Ireland for Easter. Learn how to make this festive dessert and bring a touch of ancient tradition to your table!
Step-by-step recipe
Step 1:
Place flour in a bowl, add brown sugar, spice mix, baking powder, baking soda, and orange zest. Whisk to combine.
Step 2:
Add the diced butter and mix with a mixer on low speed.
Step 3:
Add eggs and mix.
Step 4:
Gradually add the milk, mixing first on medium speed, then on high speed for another minute once the ingredients are combined.
Step 5:
Add raisins and candied fruits, mix with a spatula.
Step 6:
Dust the surface and rolling pin with powdered sugar and roll out a third of the marzipan mixture. Cut out a circle slightly smaller in diameter than the cake pan.
Step 7:
Place half the dough into a greased or sprayed and lined tin, place a circle of marzipan on top and top with the remaining dough and smooth it out, making a small indentation in the middle with a spatula.
Step 8:
Bake in a preheated oven at 150 degrees for 2 hours.
Step 9:
Cool the cake and carefully invert it onto a plate.
Step 10:
Fill all the resulting indentations with marzipan so that the top of the cake is even.
Step 11:
Roll out the remaining marzipan and cut out a circle slightly larger in diameter than the cake, spread apricot jam on top of the cake, place a circle of marzipan on top and pinch the edges with your fingers.
Step 12:
Brush the marzipan with egg.
Step 13:
Form 11 balls from the marzipan scraps, arrange them evenly in a circle, and brush with egg wash. Lightly brown the cake in the oven on the top grill.
Cooking tips
It is better to sift the dry ingredients into a bowl through a sieve.
For this cake you will need gingerbread spice mix.
Use butter, milk and eggs at room temperature.
To cut out marzipan circles, you can use a mold or an adjustable cake ring as a template. Use a mold with a diameter of 20 cm.
Keep any marzipan you are not currently working with covered to prevent it from drying out.
The indentation at the top of the cake is necessary to ensure a level surface after rising in the oven. If it does end up domed, trim it before inverting the cake.
At the final stage, watch the process carefully, otherwise the marzipan may quickly burn.
