Origin of the recipe
Okroshka is a traditional Russian dish typically made with kvass or kefir. Its origins date back to ancient Russian cuisine, and its name likely derives from the word "kroshiti" (to crumble), referring to the method of preparation, which involves chopping the ingredients. It's common to think that okroshka, like Olivier salad, cannot be made without meat or cooked sausage. But if you don't eat meat for one reason or another, that doesn't mean you have to give up this refreshing summer soup. Lenten okroshka, as a variation of this dish, originated in religious traditions, when people abstained from meat during Lent. Lenten okroshka uses vegetables, herbs, eggs, and other plant-based ingredients, and instead of meat, it adds ingredients such as potatoes, cucumbers, radishes, and various herbs.

Step-by-step recipe
Step 1:
Soak the peeled sunflower seeds in cold water for at least an hour. Then rinse under running water, add a small amount of clean water, and blend until smooth. Let sit.
Step 2:
Cut the cucumbers into small cubes and place in a bowl.
Step 3:
Grate the radish on a fine grater or cut into small cubes.
Step 4:
Cut the avocado in half and dice it right through the skin, without cutting through the skin itself, then scoop out the chopped flesh with a spoon.
Step 5:
Mix the ingredients and divide into two deep plates.
Step 6:
Strain the milk from the seeds.
Step 7:
Pour the okroshka into bowls with plant-based milk and add a tablespoon of mustard. Stir.
Step 8:
Chop the dill and green onions. Add the dill to the okroshka.
Step 9:
Grind the chopped green onions in a mortar with salt and add to the plates.
Step 10:
Garnish the okroshka with lemon wedges and serve.
Cooking tips
Chop the avocado, cucumbers and radishes before mixing the okroshka.
Instead of seeds, you can use sesame seeds or a combination of both.
