Step-by-step recipe
Step 1:
Finely chop the onion, pour vegetable oil into a pan and fry the onion until translucent.
Step 2:
Grate the carrots coarsely, add to the pan and stir.
Step 3:
Cut the potatoes into medium cubes, add to the pan and stir.
Step 4:
Add one and a half liters of water and stir.
Step 5:
Bring to a boil and simmer, covered, for 20 minutes.
Step 6:
Place the minced meat in a dry frying pan and fry, stirring.
Step 7:
Dice the bell pepper and add to the pan.
Step 8:
Peel the tomato, cut it into cubes and add it to the pan. Stir.
Step 9:
Crush 2 cloves of garlic into the pan. Stir.
Step 10:
Add a tablespoon of tomato paste and stir.
Step 11:
Season with salt and pepper, stir, cover and cook for 5-7 minutes.
Step 12:
Stir the frying mixture, add to the soup and cook for 10 minutes.
Step 13:
Add the vermicelli and cook for another 5 minutes.

Serve sprinkled with parsley.
