Pork is a very popular meat in the Far East. Pork ribs are an excellent ingredient not only for main courses but also for soups. The broth is rich and delicious. Pork rib soup is eaten by removing the ribs and dipping them in a special sauce.

Step-by-step recipe
Step 1:
Soak 600g of pork ribs in cold water for 1 hour, then blanch them for 5 minutes in boiling water.
Step 2:
Let's prepare the sauce. Place a tablespoon each of oyster sauce and soy sauce and a third of a tablespoon of brown sugar in a bowl. Stir until the sugar dissolves.
Step 3:
Slice the green onions into rings and add them to the bowl with the sauce along with a tablespoon of chili flakes. Mix thoroughly.
Step 4:
Slice 8 garlic cloves and place in a heavy-bottomed saucepan with ½ tablespoon of black peppercorns. Cook, stirring, until the garlic is lightly browned.
Step 5:
Add half a liter of water, 2 teaspoons of salt, a teaspoon of brown sugar and half a tablespoon of oyster sauce to the pan and stir.
Step 6:
Add pork ribs to the pan, bring to a boil and cook for 10 minutes.
Step 7:
Add 1 liter of water, bring to a boil and simmer over low heat, covered, for 50 minutes.
Step 8:
Remove the ribs with a slotted spoon and strain the broth, then return the ribs to the broth and bring to a simmer.
Step 9:
Serve the soup with dipping sauce, rice, and other toppings.
Cooking tips
When buying pork ribs, choose ribs that are light in color, free of spots, mucus, and unpleasant odors—this will indicate that they are fresh and come from a young animal.
Traditionally, ribs from the soup are eaten dipped in a special sauce.
It is better to cook this soup in a Dutch oven with thick walls and bottom, as some ingredients need to be fried.
