Cold borscht, or kholodnik, is a great option in the summer heat! You can boil fresh beets, or try a version with pickled beets from a jar—the cold borscht will be even more delicious and savory.

Step-by-step recipe
Step 1:
Boil and peel the eggs.
Step 2:
Cut all ingredients into small strips or cubes and place in a tureen or deep bowl.
