Origin of the recipe
The Mai Tai is one of the most popular tiki cocktails. These rum- and tropical-juice-based cocktails are often served in glasses shaped like the heads of Polynesian and Hawaiian idols, garnished with umbrellas and fruit slices. This fruit-juice cocktail uses only lime juice, and a liqueur such as Curaçao adds a citrusy note. The Mai Tai's signature feature is almond syrup.

Step-by-step recipe
Step 1:
Place ice in a shaker.
Step 2:
Pour in white rum, citrus liqueur and almond syrup.
Step 3:
Squeeze the juice of half a lime.
Step 4:
Shake the cocktail.
Step 5:
Fill the glass with crushed ice.
Step 6:
Pour the cocktail into a glass and top with dark rum.
Step 7:
Garnish the glass with mint sprigs and lime wedges.
Cooking tips
You can make your own almond syrup by simmering peeled and ground almonds or almond flour with sugar, letting it steep, and straining. Use equal parts almonds, sugar, and water. This cocktail is made in a tall glass.
