Cooking tips
Squid in any form is suitable for a warm salad: fresh, frozen, canned, and even smoked. The unusual smoky flavor won't spoil the dish, but rather adds a piquant flavor. Frozen squid should be defrosted without heating, preferably in water.
Fresh squid should be thoroughly washed, changing the water several times, and then peeled. The longitudinal chitinous plates should then be removed from the carcasses. Carefully turn the squid inside out and discard any remaining entrails. Place the cleaned carcasses in boiling water and simmer for several minutes, then drain and let the squid cool.
If you don't like the taste of celery or are worried that the bell pepper will overpower the flavor of the squid, you can replace both of these ingredients with raw carrots.
