Some might easily confuse the famous Olivier salad with the Stolichny salad, which is no less a classic. But there is a difference: Stolichny, created at the Moskva restaurant during the Soviet era, has no carrots, chicken instead of cooked sausage, more meat, and fewer potatoes. Stolichny Salad is a classic Russian salad from Soviet times. Make it for New Year's!
Step-by-step recipe
Step 1:
Boil potatoes and eggs.
Step 2:
Boil the chicken legs, remove the skin, separate the meat from the bones, cut into small pieces and place in a deep bowl.
Step 3:
Peel the eggs and cut them into small cubes. Add them to a bowl.
Step 4:
Cut the boiled potatoes into small cubes and add to the bowl.
Step 5:
Cut the pickles into small cubes and add to the other ingredients.
Step 6:
Add green peas and stir.
Step 7:
Add mayonnaise and mix thoroughly.
Step 8:
Transfer the salad to a salad bowl, garnish with herbs and serve.
Cooking tips
To reduce prep time, boil and cool all ingredients ahead of time. This salad uses barrel-salted cucumbers; pickled cucumbers won't work. Allowing the salad to rest for a bit before serving will make it more tender and flavorful.
