This stewed pumpkin with oriental spices is a classic Indian vegetable stew called sabji. Today, this dish is rightfully appreciated worldwide by both vegetarians and fans of oriental cuisine. Step-by-step recipe
Step 1:
Pour vegetable oil into the frying pan.
Step 2:
Add mustard seeds, urad dal, and asafoetida. Lightly fry, stirring.
Step 3:
Add halved dried chili pepper.
Step 4:
Finely dice the onion and garlic, and slice the jalapeño into rings and add to the pan.
Step 5:
Add chopped curry leaves and fry over low heat, stirring.
Step 6:
Add diced pumpkin, salt and simmer, stirring.
Step 7:
Add chili powder, coriander powder, cumin powder, and turmeric. Stir-fry.
Step 8:
Pour in a little water, cover and simmer over low heat for 5-8 minutes.
Step 9:
Add a pinch of garam masala, sugar, and cilantro. Mix well and turn off the heat.
Cooking tips
To avoid delays in the cooking process, it is better to chop the ingredients in advance.
Before cooking, the pumpkin must be completely peeled, core and seeds removed.
Indian urad dal, curry leaves, asafoetida, and garam masala are available online. Don't substitute them, as they add an authentic flavor to the dish.
