Vegetable khorovats is an Armenian dish that uses grilled vegetables instead of meat: peppers, eggplant, tomatoes, and zucchini. Served with greens, lavash, and sauces, it's ideal for vegetarians.
Step-by-step recipe
Step 1:
Finely chop the garlic.
Step 2:
Place whole vegetables on a grill over hot coals and cook for 10-15 minutes, turning.
Step 3:
Remove vegetables from grill and peel off any charred skins.
Step 4:
Cut the vegetables into pieces and place in a bowl.
Step 5:
Chop the green onions and add to the bowl.
Step 6:
Add garlic, vegetable oil, salt and stir.
Cooking tips
It's convenient to peel roasted vegetables in a bowl of cold water.
Remove seeds from roasted bell peppers before slicing.
