Step-by-step recipe
Step 1:
Measure out 55 grams of 3% vinegar.
Step 2:
Add 3 tablespoons of sugar, a teaspoon of salt and stir until dissolved.
Step 3:
Place rice in a saucepan and rinse two or three times under running water.
Step 4:
Pour 550 grams of water over the rice.
Step 5:
Bring the rice to a boil, covered, then reduce heat to low and simmer for 15 minutes without lifting the lid.
Step 6:
Turn off the stove, quickly remove the lid, cover the pan with a towel, and replace the lid. Let it sit for 15 minutes on the stovetop.
Step 7:
Pour the vinegar dressing evenly over the rice and toss.
Step 8:
Carefully transfer the rice to the bowl from which you will take it for preparing sushi and rolls.
Cooking tips
Choose only short-grain polished rice for sushi. Parboiled rice is not suitable; it has too little gluten and your rolls will fall apart.
If you don't have 3% vinegar, dilute regular vinegar three times. Stir the rice from the edges to the center.
If some of the rice sticks to the bottom, do not use that part.
