Cooking tips

Choose only short-grain polished rice for sushi. Parboiled rice is not suitable; it has too little gluten and your rolls will fall apart.

If you don't have 3% vinegar, dilute regular vinegar three times. Stir the rice from the edges to the center.

If some of the rice sticks to the bottom, do not use that part.
