Step-by-step recipe
Step 1:
Grind black pepper in a mortar.
Step 2:
Chop the garlic and leave it in a pile on the board.
Step 3:
Finely chop the bay leaf into the garlic, add pepper and salt. Mix thoroughly.
Step 4:
Rub the prepared salt thoroughly into the piece of lard.
Step 5:
Place the remaining salt on the board on the bottom of the bowl, place the lard on top and press the salt down on the sides.
Step 6:
Cover the bowl with lard with film and leave it at room temperature for a day, then put it in the refrigerator for three days.
Cooking tips
It is better to grind the pepper by hand – this will give the lard a more intense flavor.
