Step-by-step recipe
Step 1:
Shred the white and red cabbage. Place in a bowl.
Step 2:
Finely chop or coarsely grate the carrots. Place in a bowl.
Step 3:
Chop celery leaves, fresh parsley and add to cabbage and carrots.
Step 4:
Mix the vegetables in a bowl.
Step 5:
In a small bowl, combine mayonnaise, apple cider vinegar, salt, pepper, sugar and Dijon mustard.
Step 6:
Pour the sauce into the bowl with the vegetables and stir.
Cooking tips
When cutting cabbage and carrots, try to make sure the strips aren't too short, otherwise you might end up with just mush from the vegetables.
You can add tart apples to coleslaw, and lemon juice can be used instead of apple cider vinegar.
Refrigerating the salad allows it to infuse with flavor and makes it more flavorful.
