Step 1: Preparing the apples
First, prepare the apples. Peel and slice them into medium-thick slices. This recipe uses a generous amount of apples, which makes the pie incredibly moist.
NOTE: Choose firm, sweet-and-tart apples (such as Antonovka or Simirenko). They won't spread out during baking and will complement the sweetness of the dough nicely.
Step 2: Mixing eggs and sugar
Place 3 eggs in a bowl, add 200 grams of sugar, and a pinch of salt. Don't beat the eggs and sugar until they're pale—that's a special feature of this recipe. Simply whisk the eggs and sugar together with a fork or whisk until the sugar dissolves and the mixture is smooth.
NOTE: It is better to add sugar to the eggs gradually, actively mixing the mixture with a fork – this will help the sugar dissolve faster. Add sour cream and vanilla sugar.
Step 3: Forming the dough
