Step-by-step recipe
Step 1:
Line the bottom and sides of the pan with parchment paper and grease with butter.
Step 2:
Place sugar in a bowl, grate orange zest into it and mix well.
Step 3:
Peel the oranges and use a knife to remove only the pulp from the segments. Drain the juice into a cup.
Step 4:
Cut the orange pulp into pieces.
Step 5:
Separate the egg whites from the yolks.
Step 6:
Add salt to the whites and beat with a mixer until lightly foamy.
Step 7:
While continuing to beat, gradually add sugar and beat the whites until stiff peaks form.
Step 8:
Add the yolks one at a time, mixing with a mixer.
Step 9:
Sift flour and baking powder into the egg mixture and mix with a mixer until smooth.
Step 10:
Mix the orange pulp into the dough.
Step 11:
Pour the dough into the pan and sprinkle with flaked almonds if desired.
Step 12:
Bake in a preheated oven at 180 degrees on the middle rack for about 45-50 minutes.
Cooking tips
Make sure the membranes between the slices don't get caught in the charlotte—they'll taste bitter. If the top of the charlotte is too browned, cover it with foil.
Check the readiness of the charlotte with a wooden skewer – it should come out dry and clean.
