Step-by-step recipe
Step 1:
Break two eggs into a bowl, add a pinch of salt and beat with a mixer, gradually adding sugar.
Step 2:
Add heavy cream and beat again.
Step 3:
Mix the sifted flour with baking powder, pour into the whipped mixture and mix with a mixer at low speed.
Step 4:
Prepare two pans by lining the bottoms with parchment paper and lightly greasing them. Place one-third of the batter into the first pan.
Step 5:
Add sifted cocoa powder to the remaining dough and mix with a mixer at low speed.
Step 6:
Pour the chocolate batter into the second pan.
Step 7:
Bake the cakes at 180 degrees Celsius (350 degrees Fahrenheit) – white cakes for 10-12 minutes, chocolate cakes for 15-16 minutes. Cool the finished cakes.
Step 8:
Place heavy cream in a bowl, add powdered sugar and vanilla sugar and mix.
Step 9:
Cut out slightly smaller diameter cake layers from the cake layers – the scraps will be used for crumbs.
Step 10:
Cut the chocolate cake lengthwise into two parts.
Step 11:
Place the chocolate cake layer on a plate, spread it with sour cream, place the white cake layer on top and spread it with cream as well.
Step 12:
Align the cake layers into a ring, place the chocolate cake layer that was the bottom layer when baking on top and also grease it with cream.
Step 13:
Place the cake in the refrigerator to soak for 2 hours.
Step 14:
Grind the cake scraps in a coffee grinder – chocolate and white separately.
Step 15:
After trimming the edges with a spatula, remove the ring, spread the remaining cream on the sides of the cake and cover the cake with chocolate chips, decorate the top with white chips.
Cooking tips
Sift flour and cocoa before adding to remove any caked lumps.
Check the readiness of the cakes with a toothpick – it should come out dry.
Sour cream cakes turn out quite moist and do not require additional soaking.
