Step-by-step recipe
Step 1:
Crush the garlic with a knife and remove the core.
Step 2:
Chop the garlic and crush it again. Repeat 1-2 more times.
Step 3:
Add salt to the garlic and grind into a paste.
Step 4:
Place mustard, egg yolk, and lemon juice in a bowl and whisk together.
Step 5:
Add garlic paste and wine vinegar to the sauce and stir.
Step 6:
While stirring constantly, gradually pour in the olive oil.

Cooking tips
If using store-bought eggs, it's a good idea to add gelatin. It will add a bit of viscosity to the sauce, preventing it from being quickly absorbed by the rye croutons and seafood in the salad.
To thicken the sauce, let it sit in the refrigerator for a while, covered with plastic wrap.
