Daikon radish puree soup

Daikon radish, both fresh and pickled, is very popular in Asia, but its piquant yet refreshing flavor has long been loved around the world. Make a delicate daikon vegetable soup with homemade vegetable broth for lunch.

Step-by-step recipe
Step 1:
Finely chop two shallots.
Step 2:
Place sesame oil in a heavy saucepan and fry the shallots until lightly golden.
Step 3:
Peel and dice the daikon.
Step 4:
Peel and chop the carrots.
Step 5:
Cut the potato into medium cubes.
Step 6:
Place the vegetables in a saucepan and lightly fry them, stirring.
Step 7:
Pour vegetable broth into the pan and stir.
Step 8:
Add bay leaf and salt, stir.
Step 9:
Cover the soup with a lid and cook for 10 minutes.
Step 10:
Remove the soup from the heat and puree the vegetables with an immersion blender.
Step 11:
Add salt and pepper to taste. Stir.
Step 12:
Cut three slices of whole grain bread into cubes.
Step 13:
Heat a little sesame oil in a frying pan, add the sliced bread and 2 tablespoons of sunflower seeds. Fry, stirring.
Step 14:
Ladle the soup into bowls, add croutons and toasted seeds, garnish with herbs and serve.
Cooking tips
Use a heavy-bottomed saucepan for one-pot dishes, starting with sautéing.
If you don't have time to prepare vegetable broth, you can buy ready-made broth in cubes or powder form.
