Step-by-step recipe
Step 1:
Break the eggs into a bowl and whisk them until smooth.
Step 2:
Peel the potatoes and grate them coarsely. Place them in a sieve, rinse with water, and squeeze to remove excess moisture.
Step 3:
Combine the grated potatoes with the beaten eggs. Mix thoroughly.
Step 4:
Dice the red pepper and add to the potatoes.
Step 5:
Finely chop the parsley and add to the bowl.
Step 6:
Grate the onion on a medium grater and add to the remaining ingredients. Mix.
Step 7:
Add salt, black pepper, turmeric, and flour. Mix thoroughly.

Line a baking sheet with parchment paper and grease with oil.

Place the potato dough in an even layer on the parchment paper and smooth it out with a spoon.

Place the pan in an oven preheated to 180°C and bake for 25 minutes.

While the crust is baking, prepare the filling. Finely dice the red onion and chicken breast.

Heat a frying pan with olive oil and butter, fry the onion until translucent.

Then add the chicken and fry for a little while.

Dice the yellow pepper, add to the meat and continue frying for 5 minutes.

Season with salt, pepper, chili sauce, and crushed garlic. Transfer the prepared filling to a bowl.

Grate the mozzarella on a medium grater.

Add half of the cheese to the filling and mix.

Remove the baked potato crust from the oven and let it cool slightly. Carefully cut it into rectangles.

Place a little filling on each rectangle and carefully roll into a roll.
Step 20:
Place the resulting potato rolls in a greased glass dish.
Step 21:
Sprinkle the remaining grated cheese on top.
Step 22:
Bake in the oven at 180°C for another 15 minutes, until the cheese is melted and golden brown.
Step 23:
For the sauce, mix 1 tablespoon mayonnaise, 2 tablespoons Greek yogurt (or sour cream), the juice of half a lemon, chopped dill, and garlic. Season with salt and pepper.
Step 24:
Serve hot potato rolls with sauce.
Cooking tips
To prevent the potatoes from turning dark after grating, immediately squeeze out the juice and mix with the eggs.
Don't overdo it with flour, otherwise the cake will become too dense and tough.
For a richer flavor of the filling, you can add a little tomato paste or dried herbs.
If you want to make the rolls more filling, increase the amount of chicken or add mushrooms.
Bake the first layer until golden and set, otherwise it may tear when rolled.
Be sure to cool the filling before wrapping it in the crust so that it does not spoil the texture.
