Baked apples with pumpkin, raisins and cinnamon
Origin of the recipe
This recipe combines two culinary traditions: Northern European, with its love of baked apples and cinnamon, and Eastern European/Balkan, where pumpkin was often prepared with dried fruit and honey. In the village cuisines of Russia, Ukraine, and the Balkans, pumpkin was baked with raisins as an affordable autumn dish rich in vitamins. Apples were added later, for tartness and juiciness. Cinnamon, introduced via trade routes, became a classic addition thanks to its warming aroma. This dessert was traditionally prepared in the fall, during harvest season, and served on its own or with yogurt, cottage cheese, or cream. Today, it remains a symbol of home comfort and natural simplicity.

Step-by-step recipe:
Step 1:
Prepare the pumpkin: wash it, peel it and remove the seeds.
Step 2:
Cut the pumpkin into small cubes approximately 2x2 cm in size.
Step 3:
Place the pumpkin cubes in a saucepan and cover with water. Place the saucepan on the stove and bring to a boil. Cook for another 10 minutes after boiling.
Step 4:
Prepare the apples: wash them, cut them in half, and remove the core and seeds. Cut the apples into wedges.
Step 5:
Prepare the lemon: cut it into wedges and add it to the apples. This will help preserve the apples' color and add a slight tartness to the dish.
Step 6:
Add the apples: Once the pumpkin begins to cook, add the chopped apples and lemon to the pan.
Step 7:
Add the raisins: Rinse the raisins under running water and add them to the pan.
Step 8:
Sprinkle with cinnamon: Sprinkle the entire contents of the pan with ground cinnamon and ginger.
Step 9:
Simmer: Cover the pan and simmer over medium heat for about 20-25 minutes, until the apples and pumpkin are tender. Stir occasionally to prevent burning.
Step 10:
Check for doneness: Use a fork to test for doneness. The fruit should be soft but not falling apart.
Step 11:
To serve: Remove the pan from the stove, let it cool slightly and serve!
Cooking tips:
Choose the right varieties: Firm pumpkins, such as butternut or butternut, work best for this recipe. Choose apples with a tart, sweet-and-tart flavor, such as Granny Smith.
Cinnamon - to taste: If you like a richer flavor, increase the amount of cinnamon to 1.5 teaspoons.
Raisins – optional: If you don't eat raisins, substitute them with dried apricots, prunes, or simply leave them out. The dish will be just as delicious.
Simmering time: How long to simmer apples and pumpkin depends on their size and variety. Start checking for doneness after 20 minutes.
Serve with yogurt: Warm baked apples and pumpkin go great with plain Greek yogurt or sour cream.
Use a saucepan with a thick bottom: This will help distribute the heat evenly and prevent the dish from spoiling.
Add honey: After cooking, you can add a little honey if the dish seems not sweet enough.
