Baked meat rolls in pita bread with vegetables

If you lack the energy or imagination to prepare something complicated for dinner, you don't have to buy shawarma or pizza. Make mini rolls from lavash and ground meat, baked in the oven with stewed vegetables. Soaked in vegetable and meat juice, these delicious rolls are great for the family table or as a hearty appetizer.

Step-by-step recipe
Step 1:
Place the minced meat in a bowl.
Step 2:
Finely chop the onion and add to the minced meat.
Step 3:
Add grated garlic, salt, black pepper, coriander, chopped cilantro, stir.
Step 4:
Pour olive oil into a frying pan, chop the onion into medium pieces, pour it into the pan and lightly fry over low heat.
Step 5:
Grate the carrots and add to the pan.
Step 6:
Peel and cut the bell pepper into strips and add to the pan.
Step 7:
Add salt, black pepper, and paprika. Fry the vegetables, stirring.
Step 8:
Add tomatoes in their own juice, mash with a spatula, stir and simmer for 10 minutes.
Step 9:
Take a sheet of lavash, spread the filling evenly over it, and roll it into a roll. Repeat with all the pieces of lavash.
Step 10:
Cut the rolls into 4 pieces.
Step 11:
Place some of the vegetables in an even layer on the bottom of the pan, place the rolls on top and cover with the remaining vegetables.
Step 12:
Cover the pan with foil and bake in the oven for 30 minutes at 200 degrees.
Step 13:
Remove the foil and bake for another 10 minutes at 230 degrees.
Step 14:
Divide among plates and serve hot, sprinkled with grated Parmesan and cilantro.
Cooking tips
For rolls, it is better to use round thin lavash.
It is better to choose minced meat that is not too fatty and not too cheap.
