Broccoli is extremely rich in beneficial vitamins and minerals, especially iron. Make a delicious broccoli and other vegetable casserole with egg and a delicious, golden-brown cheese crust. It's high in protein and low in calories, making it a great healthy addition to your diet.
Step-by-step recipe
Step 1:
Separate the broccoli into florets. Pour water into a salad bowl, add vinegar, add the broccoli, and let sit for 10 minutes.
Step 2:
Drain the water and grate the broccoli on a coarse grater.
Step 3:
Dice the onion. Pour vegetable oil into the pan and fry the onion for 3-4 minutes.
Step 4:
Cut the carrots into small cubes, add to the pan and fry for 3-4 minutes.
Step 5:
Dice the red bell pepper, add to the pan and fry for 5-7 minutes.
Step 6:
Add the sautéed vegetables to the bowl with the broccoli, season with salt and pepper and stir.
Step 7:
Break 5 eggs into a clean bowl and add cream.
Step 8:
Add salt, pepper, basil, and 50g of grated Parmesan. Whisk thoroughly.
Step 9:
Pour the liquid mixture over the vegetables and mix well.
Step 10:
Line a deep baking sheet with parchment paper, grease the parchment with vegetable oil, spread the vegetable mixture on top, and smooth it out. Sprinkle the mixture with Parmesan cheese.
Step 11:
Bake for 40 minutes at 180 degrees.
Step 12:
Place sour cream and mayonnaise in a clean bowl, crush 2 cloves of garlic, add 50 g of grated Parmesan, grainy mustard and mix.
Step 13:
Cut the casserole into portions and serve with the sauce.
Cooking tips
Soaking broccoli in water and vinegar makes it softer and less pungent in flavor.
Don't overcook the vegetables, or their flavor will become too harsh. They should just be soft.
