Zucchini and Tomato Casserole

There are many different ways to roast vegetables. Try this unusual casserole of tomatoes and young zucchini topped with mozzarella cheese—it's not only delicious but also beautiful. It's a perfect dish not only for a family lunch or dinner, but also for a holiday table.

Step-by-step recipe
Step 1:
Make three deep cuts on the tomatoes.
Step 2:
Halve and thinly slice two young zucchini or squash.
Step 3:
Place the tomatoes in a baking dish and insert the zucchini slices into the slits in the tomatoes.
Step 4:
Crush a clove of garlic and spread over the vegetables.
Step 5:
Add salt, pepper, olive oil and oregano.
Step 6:
Bake for 30 minutes at 180 degrees using top and bottom heating.
Step 7:
Slice the mozzarella and arrange over the vegetables.
Step 8:
Bake for another 10 minutes.
Step 9:
Place the baked vegetables on plates, pour over the liquid from the pan, garnish with herbs and serve.
Cooking tips
For this dish, it’s better to take green and yellow zucchini and insert their slices, alternating – it looks prettier.
Before slicing, trim the ends of the zucchini, but do not peel them.
