Step-by-step recipe
Step 1:
Cut the tofu into cubes and fry in vegetable oil in a deep frying pan (wok).
Step 2:
Remove the tofu from the pan and add finely diced onion and coarsely chopped carrots. Stir.
Step 3:
Add diced zucchini and thinly sliced bell pepper.
Step 4:
Add diced eggplant. Stir.
Step 5:
Add finely chopped tomato. Stir.
Step 6:
Add salt and stir.
Step 7:
Add turmeric and pepper mixture and stir.
Step 8:
Add 8-10 small cauliflower and broccoli florets each. Cook, stirring.
Step 9:
Add chopped dill and fried tofu.
Step 10:
Pour in the oat cream and stir.
Step 11:
Keep it on the heat for another minute, turn off the stove and serve.
Cooking tips
It's best to fry the tofu separately beforehand, otherwise it may lose its shape if you stew it together with the vegetables.
If you can get your hands on authentic Indian paneer cheese, you might consider substituting it for tofu for an authentic twist. Paneer is easy to make yourself by curdling boiling milk with lemon juice, squeezing it through cheesecloth, and pressing it for a couple of hours.
Lacto-vegetarians can use regular cream for this dish.
To minimize the amount of oil, use a non-stick frying pan.
