Origin of the recipe
Cheesecake is a soft dessert made with cream cheese and heavy cream. It's made without dough, on a base of crumbled shortbread cookies. There are many variations of this delicacy, some baked in a double boiler, others resembling a jelly. Originating in ancient times, cheesecake has become especially popular in the United States. New York cheesecake is distinguished by its crispy crust and lack of additives.

Step-by-step recipe
Step 1:
Crush the shortbread cookies in a bowl.
Step 2:
Add melted butter and stir.
Step 3:
Pour the crumbs into a round pan, smooth them out and press them into a cake.
Step 4:
Grease the inside of the pan with butter and line it with a strip of parchment paper. Wrap the outside of the pan with foil.
Step 5:
Place cream cheese in a clean bowl, add sugar and whisk to combine.
Step 6:
Add sour cream. Stir.
Step 7:
Pour in heavy cream. Stir.
Step 8:
Break eggs into a bowl and mix.
Step 9:
Add cornstarch and vanilla extract. Stir.
Step 10:
Squeeze the juice of a quarter of a lemon, add it to the bowl and stir.
Step 11:
Place the prepared mixture into the pan, distribute and level it evenly.
Step 12:
Bake on a tray filled with boiling water for 30 minutes at 180 degrees.
Step 13:
Reduce the temperature to 150 degrees and bake for another 30 minutes.
Step 14:
Turn off the oven and leave the cheesecake in for another 1 hour.
Step 15:
Let the cheesecake cool and refrigerate for 6 hours.
Step 16:
Place raspberries in a clean bowl, sprinkle with sugar, add water and microwave for 4 minutes.
Step 17:
Rub the raspberries through a sieve.
Step 18:
Slice the cheesecake and serve with raspberry sauce.
Cooking tips
Instead of sour cream, you can use 100 ml of heavy cream and 100 g of yogurt.
For this dessert, use only natural milk; plant-based substitutes are not suitable.
