Step-by-step recipe
Step 1:
Separate the cauliflower head into florets.
Step 2:
Bring a large pot of salted water to a boil, add the cauliflower, cover and cook for 2-3 minutes.
Step 3:
In a bowl, combine 150g of chickpea crumbs, half a tablespoon of garlic powder, half a tablespoon of Italian herbs, salt and pepper to taste.
Step 4:
Add 2 tablespoons of finely grated dairy-free Parmesan cheese and 4 tablespoons of olive oil. Mix well.
Step 5:
Remove the cauliflower from the water and set aside.
Step 6:
Place 100 grams of chickpea flour in a clean bowl, add a pinch of salt and a little water. Whisk until smooth.
Step 7:
Dip each cauliflower floret in the batter and then coat in the chickpea crumbs.
Step 8:
Place the cauliflower on a baking sheet lined with parchment paper and bake in an oven preheated to 180 degrees for 20 minutes.
Step 9:
Let's prepare the sauce. Place 200 grams of plant-based yogurt in a clean bowl and squeeze in 1-2 cloves of garlic.
Step 10:
Grate half a cucumber with the peel, squeeze out excess moisture through a sieve and add to a bowl.
Step 11:
Chop and add a bunch of fresh dill, salt and pepper to taste, a tablespoon of lemon juice and olive oil.
Step 12:
Add a quarter teaspoon of chili flakes if desired. Stir.
Step 13:
Serve the cooked cauliflower with the sauce.
Cooking tips
You can use breadcrumbs instead of chickpea crumbs, and regular flour for the batter instead of chickpea flour, but chickpeas are tastier and healthier.
When preparing the batter, add water while whisking, gradually, by eye, the dough should be neither too thick nor too runny.
