Cabbage and vegetable pancakes with cheese sauce

Vegetable pancakes are a great option for those who don't like too much flour. Besides the well-known potato pancakes, pancakes also work well with other vegetables, such as cabbage and zucchini. Tender zucchini paired with pre-softened or boiled cabbage and oatmeal makes a great breakfast option.

Step-by-step recipe
Step 1:
Shred the cabbage and place it in a salad bowl and pour boiling water over it for 5 minutes.
Step 2:
Dice the tomato and place in a clean salad bowl.
Step 3:
Grate the zucchini on a coarse grater. Add to the tomato.
Step 4:
Drain the cabbage through a sieve and add to the rest of the vegetables.
Step 5:
Break the eggs into a clean bowl.
Step 6:
Add yogurt or sour cream to the eggs. Whisk lightly.
Step 7:
Add flour and baking powder, mix with a whisk.
Step 8:
Pour the batter over the vegetables, add salt and pepper.
Step 9:
Grease the frying pan with vegetable oil.
Step 10:
Mix the vegetables into the dough.
Step 11:
Place a spoonful of the mixture into the frying pan, form a round pancake, cover with a lid and fry on one side for 3 minutes.
Step 12:
Finely grate the cheese into a clean frying pan over high heat.
Step 13:
Turn the pancake over and fry on the other side for another 3 minutes.
Step 14:
Fry the remaining pancakes in the same manner.
Step 15:
Pour the cream into the pan with the cheese.
Step 16:
Season the cheese and cream with salt and pepper, add grated nutmeg and garlic. Stir, bring to a boil, and cook, stirring, for 3 minutes.
Step 17:
Serve the pancakes drizzled with sauce.
Cooking tips
If the cabbage is old, it is better to boil it rather than pour boiling water over it.
Cut the stem off the zucchini, but do not peel it.
It is better to fry the pancakes and prepare the sauce at the same time.
