Elesh is a small, round, closed pie filled with chicken and potatoes. The word "elesh" literally means "portion." These pies look similar to their "big brothers," like the gubadiye, although the filling is, of course, simpler. But simpler doesn't mean less delicious!

Elesh with chicken and potatoes is a traditional Tatar dish that captivates with its aroma and rich flavor. Tender dough, juicy chicken filling, and oven-baked potatoes create a perfect harmony. Try this simple and delicious recipe to delight yourself and your loved ones!
Step-by-step recipe
Step 1:
Place sour cream, two egg whites and one yolk in a bowl.
Step 2:
Add salt, sugar and whisk.
Step 3:
Add 170 g of warm butter and whisk.
Step 4:
Sift flour into a bowl, add baking powder. Mix and knead the dough.
Step 5:
Cut the dough into 16 pieces – 8 of each of two sizes. Roll into balls.
Step 6:
Cut the chicken breast into small pieces, the onion into small pieces, and the potatoes into small cubes.
Step 7:
Add salt, pepper, 30 g of butter and rub with your hands.
Step 8:
Roll out large and small balls of dough into circles.
Step 9:
Place the filling in the center of the large circles, cover with small circles and pinch from bottom to top into a braid.
Step 10:
Place on a baking sheet lined with paper, brush with egg and bake for 30-35 minutes at 180 degrees.
Cooking tips
Divide the dough however you like. You can divide it in half, divide one half into 6 pieces, cut two equal pieces from the other, and divide the remainder into 8 pieces, or divide the dough into two unequal parts.
Leave enough space around the filling to fold it over and pinch it shut. The pies should be roughly cylindrical, like "circles."
