Charcoal-grilled trout
Origin of the recipe
Fishing and cooking fish over an open fire are practices that have existed for thousands of years. In many coastal cultures, fish is a staple food, and it is often cooked over charcoal or an open fire. This may be because this cooking method preserves the fish's natural flavor and imparts a smoky aroma.

Cooking tips
To monitor cooking, you can check the temperature of one of the steaks with a thermometer, or open one of the steaks from time to time to check.
If possible, keep the steaks over an even layer of coals; otherwise, some steaks will be cooked more than others, and some may remain undercooked. A grill is not an oven; it's difficult to cook evenly.
If you're not concerned about the steaks drying out or the fat leaking into the grill, you can simply place the steaks on the grate. It's important that the grate be shallow enough to prevent the steaks from slipping and falling into the coals.
