Step-by-step recipe
Step 1:
Remove the mackerel heads and cut the fillets along the spine.
Step 2:
Rinse the mackerel fillets thoroughly and place in a bowl or deep plate.
Step 3:
Place a few sprigs of parsley, crushed garlic, some lemon zest, salt, and pepper in a blender. Puree.
Step 4:
Pour the resulting marinade over the mackerel, rub well and leave for 2 hours.
Step 5:
Cut the ends off the jalapeno peppers, cut them in half lengthwise and remove the seeds.
Step 6:
Fill the pepper halves with cream cheese.
Step 7:
Wrap each stuffed half in a strip of bacon.
Step 8:
Roll up the marinated mackerel fillet, roll each piece into a roll and thread onto a skewer.
Step 9:
Light a fire in the grill and prepare the coals.
Step 10:
Grill the mackerel on skewers and the appetizer on the grill, on all sides, until done.
Step 11:
Serve the kebabs with a spicy appetizer.
Cooking tips
It is better to take frozen mackerel and defrost it halfway – this way it is easier to cut into fillets.
The coals for grilling should be hot, but already covered with grey ash.
Thin mackerel fillets cook quickly, don't overcook them!
