Oddly enough, the "Polish" fish sauce, consisting of crumbled boiled eggs and butter, is native to Russian cuisine. Authentic Polish sauce is much more complex, made with a mixture of mirepoix vegetables, vinegar, and spices. The egg-butter sauce adds nutrition, flavor, and aesthetic appeal to boiled white fish, such as cod, which many, unfortunately, associate with "official" food.
Step-by-step recipe
Step 1:
Cut the cod fillet into medium pieces.
Step 2:
Bring water to a boil in a saucepan. Add cod, celery root, bay leaf, whole peeled onion, and peppercorns. Season with salt and simmer for 20 minutes.
Step 3:
Hard-boil the eggs, chop them and place them in a bowl.
Step 4:
Add softened butter and mix thoroughly.
Step 5:
Pour in the fish broth and stir.
Step 6:
Pour the mixture into the pan, add the fish and heat for 1-2 minutes.
Step 7:
Place the fish on a plate and cover with a thick portion of the sauce.
Cooking tips
For this dish, it is better to use ready-made cod fillet.
Strain the broth before adding it to the sauce. Pour it into the egg-butter mixture while it's hot.
Serve the cod garnished with herbs to taste.
