Tatar soup Chumara
Origin of the recipe
Chumar are dumplings, often made from pea flour, simmered in soup—usually pea soup, meat or chicken broth with aromatic lamb. The soup itself, rich, thick, and very appetizing, is also called chumar.

Step-by-step recipe
Step 1:
Let the meat cook for 1 hour.
Step 2:
Add salt and bay leaf.
Step 3:
Soak the peas.
Step 4:
Finely chop the onion, grate the carrots on a medium grater.
Step 5:
Cut the potatoes into small pieces and the tomato into small cubes.
Step 6:
Remove the meat from the broth and pour 50 ml of broth into a separate bowl.
Step 7:
Add peas to the broth and cook for 30 minutes.
Step 8:
Melt butter in a frying pan, add onion and carrot, stir and fry a little.
Step 9:
Add chopped tomato and stir.
Step 10:
Cut the meat into small pieces and return to the pan, stir.
Step 11:
Add potatoes and cook for 10 minutes.
Step 12:
Add onion and carrot, stir.
Step 13:
Beat the egg into a bowl, add salt, broth and whisk.
Step 14:
Add flour and whisk to form a liquid dough.
Step 15:
Add pepper to the soup and stir.
Step 16:
Add half a teaspoon of dough to the soup.
Step 17:
Fry two pieces of white bread in a frying pan with vegetable oil on both sides, rub with garlic and serve with soup sprinkled with herbs.
Cooking tips
Lamb is best for this soup.
For faster cooking, it is better to soak the peas in advance for several hours.
For dumplings, you can use either regular flour or pea flour.
