Origin of the recipe
This simple yet exquisite omelet is associated with the great French artist Claude Monet. The artist was a gourmet and, although he didn't cook himself, he avidly collected recipes, which his heirs compiled into a cookbook. One of his guests, Count Orsini, shared this unusual omelet recipe with the artist.

Step-by-step recipe
Step 1:
Separate the yolks from the whites, place the yolks in separate bowls, and pour the whites into one bowl.
Step 2:
Salt the whites and beat them with a mixer until they form a white foam.
Step 3:
Line a baking sheet with paper and grease with vegetable oil.
Step 4:
Place the whipped egg whites on a baking sheet in three portions, season with salt and pepper.
Step 5:
Bake in the oven for 5 minutes at 180 degrees.
Step 6:
Place a yolk on each portion of whites and bake for another 3 minutes.
Step 7:
Garnish with chopped green onions and serve on toast.
Cooking tips
You can separate the yolks from the whites by pouring them from shell to shell, breaking them between your gloved fingers, or using a special tool.
Try not to damage the yolks at any stage, otherwise the dish will not turn out well.
