Origin of the recipe
Cheese sandwiches were first made in the 1920s, when grilling and frying became popular. Sliced bread and processed cheese also began to be used at this time, making sandwich making more accessible and convenient. The hot cheese sandwich became especially popular during the Great Depression, when simple and inexpensive dishes were in demand. By the 1930s, it was already widespread and often served in school cafeterias.

Step-by-step recipe
Step 1:
Wash the mushrooms.
Step 2:
Finely chop the parsley.
Step 3:
Grate the Parmesan cheese on a fine grater.
Step 4:
Chop the garlic.
Step 5:
Pick enough leaves from the thyme sprigs to make 1 teaspoon.
Step 6:
Cut the mushrooms into thin slices.
Step 7:
Fry the garlic and thyme in a little vegetable oil.
Step 8:
Add mushrooms to the pan.
Step 9:
Fry the mushrooms over low heat until almost all the liquid has evaporated.
Step 10:
Add salt, pepper, and parsley to the mushrooms. Stir.
Step 11:
Combine grated Parmesan with mushrooms in a bowl.
Step 12:
Place the filling on the bread slices and top with the second slice.
Step 13:
Place sandwiches on the grill and cook for 2-3 minutes.
Cooking tips
Parmesan cheese should be at least 12 months old. If this isn't possible, use any hard cheese you like.
It's better not to wash the mushrooms, but to wipe them with a damp cloth, otherwise they will absorb a lot of liquid and become much more "rubbery."
