Croque Madame sandwich with cheese crust
Origin of the recipe
The croque madame is a variation of the French toasted croque monsieur (croque means "crispy"), and the flirty "madame" in its name comes from the elegant "hat" of a fried egg. This very filling and appetizing dish makes an excellent breakfast, snack, or even a full lunch.

Step-by-step recipe
Step 1:
Melt the butter in a saucepan over low heat.
Step 2:
Add flour to the butter and whisk thoroughly until all large lumps disappear.
Step 3:
While stirring, add milk.
Step 4:
Cook the sauce, stirring constantly, until thickened.
Step 5:
Add nutmeg, salt and pepper to the sauce.
Step 6:
Take 2 slices of bread and spread mustard on one side.
Step 7:
Place 4 slices of ham on each buttered slice of bread.
Step 8:
Take 2 more slices of bread and spread them with the prepared sauce.
Step 9:
Cover the ham with the buttered bread slices, sauce side down.
Step 10:
Heat 2 tablespoons butter and 1 tablespoon olive oil in a frying pan.
Step 11:
Brown the sandwiches on both sides in hot oil.
Step 12:
Place sandwiches on a baking sheet.
Step 13:
Grate the cheese. Spread the sauce on the sandwiches and sprinkle with grated cheese.
Step 14:
Bake in the oven at 200 degrees until golden brown.
Step 15:
In a frying pan, cook two fried eggs using 1 egg per fried egg.
Step 16:
Place the eggs on top of the sandwiches, sprinkle with dill and serve.
Cooking tips
When preparing fried eggs, do not let the yolk harden completely, this will ruin the whole point and taste of the fried egg.
You can use any cheese for baking, even a mixture of cheeses. But it's important that they be hard varieties, otherwise the crust will likely fail.
