French fry lovers can order them at a fast food restaurant or buy them frozen and fry them in oil. But this isn't exactly a dietary or filling dish. Try preparing potato sticks differently – as a hearty and delicious casserole with egg and cheese. The sticks themselves will be thinner, but they'll be thoroughly infused with the flavors of the other ingredients and will be much more tender.
Step-by-step recipe
Step 1:
Peel the potatoes and grate them into long strips using a Korean grater. Place the grated potatoes in a bowl and cover with water.
Step 2:
Mix the contents of the bowl, squeeze the potatoes with your hands and transfer them to a colander, and when the water drains, transfer them to a bowl.
Step 3:
Add corn flour to a bowl and mix with potatoes.
Step 4:
Crack the eggs into a separate small bowl. Add salt and mix.
Step 5:
Chop the onion and grate the cheese on a coarse grater.
Step 6:
Place the frying pan over high heat and add vegetable oil. Place half the potatoes in the pan, spread them evenly, and press them down with a spatula.
Step 7:
Take half of the egg mixture and spread it evenly over the potatoes.
Step 8:
Turn the potatoes over using a plate or cutting board and let them brown briefly. Transfer the fried potatoes to a plate.
Step 9:
Add oil to the pan and repeat the frying process as in the previous steps. Brush the second batch of potatoes with chili sauce after frying.
Step 10:
Sprinkle the cheese over the potatoes and spread evenly. Top with chopped green onions.
Step 11:
Place the potato pancake from the plate onto the cheese and cover the pan with a lid.
Step 12:
When the cheese has melted, turn off the heat, transfer the dish to a plate, cut it in your preferred way and serve!
Cooking tips
You can use any cheese, but if you do use mozzarella, choose hard mozzarella, not brine, otherwise too much liquid will be released and the dish will be ruined.
For best frying, it's best to fry potatoes at a low heat, but in this case, you can ignore this rule: thinly grated potatoes will cook quickly anyway.
Some people like to use butter when frying potatoes, so feel free to experiment. This recipe is a guideline, not a law.
