Sweet potatoes in coconut milk

Step-by-step recipe
Step 1:
Finely chop the onion and garlic.
Step 2:
Pour olive oil into a frying pan and fry the onion.
Step 3:
Peel the ginger, grate it finely and add to the onion.
Step 4:
Peel the sweet potato, cut into large cubes and add to the pan.
Step 5:
Add peanut butter and red curry paste. Stir.
Step 6:
Pour coconut milk into the pan and stir.
Step 7:
Add water and stir.
Step 8:
Bring to a boil, reduce heat and simmer for 25-30 minutes, until sweet potatoes are tender.
Step 9:
Add spinach to the pan. Stir.
Step 10:
Squeeze lime juice into the pan, add salt, stir and remove from heat.

Serve with rice.
Cooking tips
Be careful not to let the onion burn, otherwise the dish will taste bitter.
