Not everyone loves liver, but even those who despise offal will appreciate these beef liver cutlets. This delicious, filling, and healthy dish is incredibly filling, as beef liver contains many valuable nutrients. Make these authentic liver cutlets, which are much more like cutlets than the more common liver pancakes.
Step-by-step recipe
Step 1:
Remove the film from the liver and remove the ducts, if any.
Step 2:
Cut the liver and lard into small, convenient pieces.
Step 3:
Pass everything together through a meat grinder
Step 4:
Finely chop the onion and fry in vegetable oil, adding salt and sugar.
Step 5:
Salt and pepper the minced meat, add the egg, fried onion and baking soda.
Step 6:
Add semolina, stir and let stand for half an hour.
Step 7:
Heat vegetable oil in a frying pan, place the cutlets in with a spoon and fry for 2-3 minutes on each side. 
Cooking tips
For cutlets, choose the edge of the liver, where there are few inedible ducts.
If you fried the onion without sugar, add it to the minced meat.
It is better to place the cutlets into the frying pan with a wet spoon.
For greater fluffiness, you can simmer the finished cutlets under a lid, adding a little water.
