Origin of the recipe

As always, following tradition, Olivier salad and herring under a fur coat are most often found on the New Year's table. But we'll prepare a new salad – again, under a fur coat, but unconventional, with one more ingredient. Crab sticks add a touch of sweetness and an interesting twist. Otherwise, it's the same old favorite. Interested? Then let's get started.

What do you need for cooking?

Ingredients

  • Herring
  • Boiled potatoes
  • Boiled carrots
  • Boiled beets
  • Boiled eggs
  • Crab sticks
  • Mayonnaise

Kitchen utensils

  • Knife
  • Board
  • Grater
  • Culinary ring

We'll need the same ingredients as for herring under a fur coat. They need to be pre-boiled, cooled, and peeled. We'll also add one more ingredient to the salad: crab sticks.

Step-by-step recipe

We'll be assembling the salad into a culinary ring (18 cm in diameter), so place it on a serving platter immediately. Unlike the herring under a fur coat, the first layer won't be herring, but boiled potatoes. It's best to choose medium-sized carrots and beets. Prepare all the ingredients and begin assembling the salad.

Step 1

Crab Salad under a Fur Coat - Step 1 Grate the boiled potatoes on a coarse grater and distribute evenly over the dish.

NOTE: Do not press the potatoes too much so that the salad does not lose its airiness.

Step 2

Crab Salad under a Fur Coat - Step 2 Next, you need to clean the herring and remove the bones. Then cut it into small cubes and place the herring on top of the potatoes.

Step 3

Crab Salad under a Fur Coat - Step 3 The next layer is boiled carrots, we lay it out and grease this layer with mayonnaise.

Step 4

Crab Salad under a Fur Coat - Step 4 The next layer is crab sticks—a new ingredient to a traditional dish. Cut the crab sticks into small cubes.

Step 5

Crab Salad under a Fur Coat - Step 5 Place the crab sticks in a ring, grate the egg whites on top on a fine grater, and grease the layer with mayonnaise.

NOTE: Grated egg whites add airiness and juiciness to the crab sticks.

Step 6

Crab Salad under a Fur Coat - Step 6 Grate the boiled beets on a coarse grater, spread into an even layer and grease with mayonnaise again.

Step 7

Crab Salad under a Fur Coat - Step 7 Traditionally, we decorate the top layer of the salad with a finely grated yolk.

NOTE: You can also decorate the salad with finely grated hard cheese.

Cooking tips

We've created a bright, beautiful, juicy, and delicious salad. To make it even more delicious, follow these tips.

Grate boiled vegetables (potatoes, carrots, beets) directly over a culinary ring, rather than in a separate bowl. This will prevent them from sticking together prematurely and will also add volume and airiness to the salad.

Instead of chopping, you can grate the crab sticks on a coarse grater. Combined with the grated egg whites, the layer of crab sticks will become incredibly tender. Since the salad is multi-layered, using pure mayonnaise can make it too heavy. For a lighter salad, mix the mayonnaise with 1-2 tablespoons of low-fat sour cream or natural yogurt. This will lighten the salad's texture.
